Aunt Ems Gourmet Popcorn - Home  


-- DOWN HOME INSIDE-OUT TURKEY PIE --
Recipe adapted from 'Orville Redenbacher's Popcorn Cookbook'

Ingredients:
6 cups of Aunt Em's Tender White or American Style Popcorn
1 cups of water
¾ cup of deiced celery
2 Tablespoons of butter
½ teaspoon of sage
¼ teaspoon of pepper
¼ teaspoon of garlic powder
2 (2.8 oz) cans of French Fried Onions
1 egg, lightly beaten
2 cups of cooked and cubed turkey
1 (10 ¾ oz) can of condensed cream of chicken soup
1 (10 oz) bag of frozen peas and carrots, thawed and well drained
Non-Sticking Cooking Spray

Directions:
* Warm up the oven to 350° F.
* Spray the inside of a 9 inch soufflé dish with the cooking spray (anything served in a soufflé dish just naturally get a certain amount of respect)
* Simmer water, celery, and butter in a small saucepan for seven minutes (OK, if you only do six minutes your celery will be a little more crunchy, but while you are simmering go ahead and move on to the next step).
* Combine Aunt Em's popcorn, sage, pepper, and garlic powder in a large mixing bowl (by now the simmering celery should be done so backup and take it off the heat).
* Pour celery broth over popcorn mixture and stir to evenly moisten everything.
* Add 1 can of the French Fried Onions and the egg into the popcorn mixture and blend well.
* Spoon the popcorn mixture into the soufflé dish. Press the stuffing evenly on the bottom and up the sides of the dish to create a shell for the pie.
* Combine cooked turkey, chicken soup, peas, and carrots in a medium-mixing bowl.
* Pour ½ the filling into the pie shell, and then add ½ of the remaining can of French Fried Onions. Repeat with the remaining filling and onions (when you are sprinkling the remaining onions on top of filling, leave a inch or so wide gap between the pie shell and the onions in the center of the pie. The reason for the gap is to have some of the pie's filling visible).
* Cover and bake for 35 to 40 minutes until heated through (a pie pan makes a convenient cover for a soufflé dish if you don't have a lid).
* Serve warm.
