Aunt Ems Gourmet Popcorn - Home

-- NINA REDENBACHER'S TOFFEE FUDGE SQUARES --
Recipe adapted from 'Orville Redenbacher's Popcorn Cookbook'
- Ingredients:
- 6 cups Aunt Em's Kettle Korn - lightly crushed
- ½ lb butter or margarine
- 3 cups semi-sweet chocolate morsels
- 3 ¾ cups of sugar
- 1 can (12 oz) evaporated milk
- ½ teaspoon salt
- 1 ½ cups chopped nuts (what ever type you like)
- 1 Tablespoon vanilla
- Non-Stick cooking spray
- Directions:
- * Spray a 13 x 9 x 2 inch baking pan with the non-stick cooking spray.
- * Evenly spread 2 cups of crushed Aunt Em's Kettle Korn in the pan.
- * Place butter and chocolate in a large mixing bowl.
- * Combine sugar, evaporated milk, and salt in a large saucepan.
- * Bring mixture to a boil over low heat while stirring constantly.
- * Boil mixture on medium heat for an additional 14 minutes while stirring constantly.
- * Pour boiling mixture over waiting butter and chocolate in the mixing bowl.
- * Use an electric mixer to blend together on low speed.
- * Once blended, beat on high speed for additional 10 minutes while scraping the sides of the bowl as needed.
- * Remove bowl from blender and stir in nuts and vanilla.
- * Spread fudge over popcorn in baking pan.
- * Top with remaining crushed Aunt Em's Kettle Korn.
- * Chill for 2 hours or until firm.
- * Cut into 1-½ inch squares.
