Aunt Ems Gourmet Popcorn - Home  


-- NINA REDENBACHER'S TOFFEE FUDGE SQUARES --
Recipe adapted from 'Orville Redenbacher's Popcorn Cookbook'

Ingredients:
6 cups Aunt Em's Kettle Korn - lightly crushed
½ lb butter or margarine
3 cups semi-sweet chocolate morsels
3 ¾ cups of sugar
1 can (12 oz) evaporated milk
½ teaspoon salt
1 ½ cups chopped nuts (what ever type you like)
1 Tablespoon vanilla
Non-Stick cooking spray

Directions:
* Spray a 13 x 9 x 2 inch baking pan with the non-stick cooking spray.
* Evenly spread 2 cups of crushed Aunt Em's Kettle Korn in the pan.
* Place butter and chocolate in a large mixing bowl.
* Combine sugar, evaporated milk, and salt in a large saucepan.
* Bring mixture to a boil over low heat while stirring constantly.
* Boil mixture on medium heat for an additional 14 minutes while stirring constantly.
* Pour boiling mixture over waiting butter and chocolate in the mixing bowl.
* Use an electric mixer to blend together on low speed.
* Once blended, beat on high speed for additional 10 minutes while scraping the sides of the bowl as needed.
* Remove bowl from blender and stir in nuts and vanilla.
* Spread fudge over popcorn in baking pan.
* Top with remaining crushed Aunt Em's Kettle Korn.
* Chill for 2 hours or until firm.
* Cut into 1-½ inch squares.
