-- SPANISH OMELET --
Recipe adapted from 'For Popcorn Lovers Only by Diane Pfeifer'

Ingredients:
8 cups Aunt Em's Tender White Popcorn
1 Tablespoon butter
2 teaspoons tomato paste or dry tomato soup
2 Tablespoons powdered egg mix
1 tablespoon dried green pepper flakes
1 Tablespoon minced onion
¼ teaspoon black pepper
Dash of cayenne pepper
Salt to taste
* Optional variation - add ½ cup of bacon bits

Directions:
* Place Aunt Em's Tender White popcorn in a large bowl (no you can't eat it yet!).
* Melt butter in small pan over low heat.
* Remove from heat and stir in tomato ingredient (it is either the paste or the soup mix). Note; the mixture will be quite thick.
* Stir in remaining ingredients.
* Spoon onto popcorn then toss with your hands to coat thoroughly. You can lick you fingers afterwards if, and only if no one is looking!

Your omelet is complete which means it is time to eat, go for it!
