Aunt Ems Gourmet Popcorn - Home

-- PESTO SURPRISE --
Recipe adapted from 'The Hoppin 'n' Poppin Popcorn Cookbook by Gina Steer'
- Ingredients:
- 4 cups Aunt Em's Tender White Popcorn
- 1 Tablespoon of fresh basil leaves
- 1 clove of garlic, pealed and crushed (crushing garlic is a real opportunity to take out your aggressions on something)
- ¼ cup pine nuts
- 4 Tablespoons of olive oil
- 1 Tablespoon of freshly grated Parmesan cheese (OK, you can use the store bought grated stuff but it won't have quite as much flavor)
- Freshly Shaved Parmesan (Got ya, you can't buy shaved Parmesan so buy a hunk of Parmesan and shave and great it. Save that pre-grated stuff for the
a pizza.)
- Pinch of salt (more if you like)
- Directions:
- * Place the basil, garlic, and pine nuts in a food processor and blend into a puree. (Yes, you beat the heck out of the garlic for nothing, but don't you feel better).
- * While the food processor is still running, slowly poor in the oil.
- * Poor the puree into a bowl and stir in the cheese and salt.
- * Place Aunt Em's Tender White Popcorn in a large serving bowl.
- * Gently stir in the pesto sauce until the popcorn is well coated. Aunt Em's would like to suggest you use either a wooden spoon or spatula to stir everything together.
- * Add Parmesan shavings on top and serve.
