Aunt Ems Gourmet Popcorn - Home

Recipe adapted from 'Orville Redenbacher's Popcorn Cookbook'
- Ingredients:
- 2 Tablespoons of butter
- 1 lb of medium to large mushrooms tops (chop the stems up for use in the filling)
- 1 ½ Tablespoons of chopped fresh parsley
- 2 teaspoons of crushed fresh garlic
- ¼ teaspoon of basil
- 2 ½ cups Aunt Em's Tender White Popcorn (finely crushed)
- ¾ cups of grated Parmesan cheese
- ¼ cup cooked sausage (optional)
- Directions:
- * Warn up the old oven to 350° F.
- * Melt butter in a medium non-stick skillet.
- * Add mushroom stems, parsley, garlic, basil and sausage (if used) to the skillet and sauté for 2 to 3 minutes.
- * Remove skillet from heat and stir in Parmesan cheese and Aunt Em's Tender White Popcorn until moistened (you control the dryness of the mixture by how much popcorn you add, if you want it a little dryer add more popcorn).
- * Fill mushroom caps with stuffing mixture (if you have left over stuffing wrap it in foil and bake with the mushrooms).
- * Place stuffed mushrooms, filled side up, on baking sheet.
- * Bake for 10 to 15 minutes or until heated through.
- * Serve while still warm.
