Aunt Ems Gourmet Popcorn - Home

Recipe adapted from 'The Hoppin 'n' Poppin Popcorn Cookbook by Gina Steer'

Ingredients:
4 cups Aunt Em's Tender White Popcorn or one of Aunt Em's CheeseCorns
1 red bell pepper
3 Tablespoons of sunflower or corn oil
2 to 3 habanera red chili peppers (deseeded and finely chopped) - Safety Tip - Wash hands immediately after handling fresh hot peppers and for gods sake don't touch any part of your person that is sensitive until you do!!!
1 small onion (peeled and chopped)
2 cloves of garlic (peeled and crushed) Note: If you are using Aunt Em's Cheddar Ranch CheeseCorn to make this recipe reduce recipe to 1 clove of garlic
1 small ripe but firm avocado (California black type avocado would be best, and small is no problem because they only come that way)
2 Tablespoons of freshly chopped parsley
Grated rind and juice of ˝ lemon
Salt and freshly ground black pepper to taste

Directions:
* Cut red bell pepper in half and discard seeds.
* Place bell pepper on a broiler pan.
* Coat bell peppers with 2 Tablespoons of the oil and place in preheated broiler with the skin side up until skin has blistered and blackened (about 10 minutes).
* Remove peppers from broiler and allow to cool.
* Discard the burnt skin of the bell pepper.
* Chop roasted meat of red bell peppers into thin strips.
* Peel the avocado and discard the pit (you really only have two choices with an avocado pit; you either throw it away or use to try to grow your own).
* Slice avocado meat into small cubes and coat with lemon juice.
* Heat remaining oil under medium heat in a skillet.
* Sauté the chopped habanera chilies, onion, and garlic for 5 minutes (stir occasionally and don't burn the garlic).
* When onions are turning clear, add the chopped red bell pepper and continue to heat until warm (about 1 minute).
* Add avocado to the pan with the lemon rind and herbs.
* Season to taste and continue to heat until hot (about 2 to 3 minutes).
* Place the Aunt Em's Popcorn you have chosen to use in a large serving bowl and spoon over the chili mixture.
* Serve immediately.

Depending on the habanera peppers you used, you might want to serve a tall cold drink as a side dish for this dish. .
