-- GOOD MORNING CHEERY CHERRY COFFEE CAKE--
Recipe adapted from 'Orville Redenbacher's Popcorn Cookbook'
- Ingredients:
This cake has three basic sections to it; the cake bottom, the streusel topping, and the icing on top.
- The Cake Bottom:
- 2 cups of all-purpose baking mix
- 2/3 cup of milk
- ¼ cup of sugar
- 2 Tablespoons of Vegetable Oil
- 1 egg
- ½ of a 21 ounce can of cherry pie filling (you can substitute whatever fruit pie filling you prefer).
- The Streusel:
- 2 Tablespoons of white sugar
- 3 Tablespoons of butter or margarine (softened)
- ½ teaspoon of cinnamon
- 3 cup of Aunt Em's Kettle Korn lightly ground up
- ½ cup all-purpose flour
- ¼ cup chopped nuts (optional)
- The Icing:
- 1 cup of powdered sugar
- 1 Tablespoon of water
- 1 teaspoon of vanilla
- Directions:
- * Preheat oven to 350° F
- * Grease a 9 inch pie dish
- * Cream together sugar and butter in a bowl (Aunt Em is a country girl and as such she knows enough to use an electric mixer do this job).
- * Add in the cinnamon.
- * Stir in remaining streusel toppings by hand. Blend until crumbly and then set aside for latter. (Okay you can nibble on it a little bit while you
are making the cake, but don't eat to much or you will have to start all over again).
- * In a medium mixing bowl, combine all the cake ingredients with the exception of the pie filling together.
- * Mix well, but don't beat it up to much. (Cakes are like men, they don't show their burses easily, but they get tough when not handled properly).
- * Pour the cake mixture into that greased pie dish that has been sitting around until now.
- * Sprinkle ½ the streusel over the cake batter.
- * Pour or spoon the pie filling evenly over streusel.
- * Sprinkle the remaining streusel on top.
- * Bake in that oven that has been keeping you warm while you were making everything for 40 to 45 minutes. (The cake is done when a wooden
toothpick stuck in the center comes out clean).
- * Let the cake cool for 15 minutes or so while you make the icing.
- * In a small bowl combine all the icing ingredients.
- * Mix until smooth. (This is another good job for the electric mixer).
- * Drizzle icing over the coffee cake.
That's it; you are almost done. All you need know is a fresh cup of coffee and someone special to share your creation with.
