Aunt Ems Gourmet Popcorn - Home

Recipe adapted from 'For Popcorn Lovers Only by Diane Pfeifer'
- Ingredients:
- 8 cups Aunt Em's Kettle Korn (roughly ground)
- 1-cup granola
- 6-ounce package of butterscotch chips
- 1/3-cup peanut butter (smooth type)
- 2 Tablespoons butter
- 7 ounce jar marshmallow cream or melted marshmallows
- Directions:
- * Combine popcorn and granola in a grease 9 x 13 x 2-inch baking pan. (Don't worry, its OK; they are both whole
grains and they will play together well).
- * Melt butterscotch chips, peanut butter, butter, and salt in large saucepan over low heat.
- * Stir until smooth then remove from heat.
- * Stir in marshmallow cream.
- * Add Aunt Em's Kettle Korn and the granola. (They are both whole grains and they will play together well, so don't worry).
- * Stir to coat evenly, and then spoon into greased baking pan.
- * Press mixture firmly in pan and refrigerate until set (about 4 hours).
- * Cut into bars and serve with a good cup of coffee.
